Learn about sushi making from Chef Thanh Tang in our Art of Sushi Workshop where he will show you the proper tools and processes to make Nigiri, Maki, and Uramaki style sushi at home. We will discuss the best ingredients, where to shop and what combinations work best. Learn all the how-to’s from Asian expert, Chef Thanh Tang to customize your sushi-making at home.

You will be greeted with a bowl of Hot Miso Soup and 7-Flavor Edamame.

Then you will get your hands busy, rolling and forming;

Shrimp and Mango Maki Rolls
Crab and Avocado Rolls
Spicy Tuna Nigiri

You can enjoy with your choice of sake, beer or wine.

The Pacific Northwest Summer Seafood Feast

We are lucky to live in a region with an abundance of fresh seafood, wild mushrooms, foraged greens, and an abundance of year-round locally grown produce. Join Chef Jennifer Berry in this hands on class where her menu celebrates the abundance the Pacific Northwest has to offer. We will start with a fun and classic old-school appetizer, Clams Casino. Then, perfect a local summertime grilling technique, Cedar Plank Grilled Coho Salmon, which will be complemented with fresh seasonal Marinated Tomatoes and Roasted Chanterelles.  We will finish our feast with a classic Cherry Clafoutis. When it comes to enjoying crab, simple is best for most seafood fanatics. Join Chef James Sherrill in this hands-on class as he shows you the versatility of this fresh taste of the sea with standout recipes for a crab appetizer, a fantastic salad for any spring meal, and of course, the ever popular, anytime of year, crab cake. Learn the restaurant trick for producing perfectly rounded cakes.

The Spanish Kitchen – Paella

Spain’s most iconic dish, Paella, is the perfect centerpiece to share with family and friends. Join Chef Drew Flanders in this hand-on class and you’ll learn about the spices, flavors, and techniques that go into mastering this classic Spanish dish and the sides and sauces to accompany your paella centerpiece. Learn about blending and highlighting Spanish ingredients like the deep smoky flavors of pimenton, the luxurious floral notes of saffron, and the sweet sharpness of sherry vinegar.

  • The evening will start by enjoying a tapa prepared by Chef Drew to tide you over while we create a mouth watering
    Paella Mixta that includes chorizo, chicken, shrimp, clams, and local mussels
  • We’ll round out the meal with
    Grilled seasonal vegetables with a Romesco sauce and creamy Aioli

Enjoyed with a choice of Sangria, Beer, White or Red Wine

Based on the size of the paella, we work in groups of 4, so no singles please for this class. Couples if attending as 2 will be paired to share the work, and the fruits of your labor!

The Thai Kitchen – Inspired by POK POK

POK POK is the sound a wooden pestle makes when it strikes a clay mortar. Pok Pok is also a cookbook and guide to bold, authentic Thai cooking from Andy Ricker, the past chef and owner of the wildly popular and widely lauded Pok Pok Portland restaurants.  And now, it is the inspiration for this popular class, taught by Chef Barbara Sowatsky.

In this hands-on class you will make:

  • Ike’s FAMOUS Vietnamese Chicken Wings
  • Kai Sateh with Ajaat (Shrimp Satay & Cucumber Relish)
  • Som Tam Thai (Green Papaya Salad)
  • Phat Si Ew (Stir-fried Rice Noodles with Flank Steak and Broccoli)

The Bayou Kitchen – Jambalaya

In this hands-on cooking class, we will create the tastes from New Orleans and learn about some of the most precious cuisines in the world. Jambalaya is actually a “cousin” of Paella and includes many of the same ingredients. The dish is an amalgamation of African, Native, French, and Spanish culinary traditions. If you love paella? You’ll love jambalaya! Using the reduction technique, Chef Drew Flanders will teach you how to develop deep concentrated flavors in this simple, one-pot dish for “your community” that is beyond “hot and spicy”. You will also learn how to make the perfect rice pilaf without a rice cooker!

You will be greeted with a bowl of Texas Caviar (peppers, onion, black eyed peas & charred corn) and Chips and choice of a Sazerac Cocktail, Beer or Wine

Then we will get busy and make;

  • Traditional Southern Jambalaya with the Cajun trinity of Onion, Celery, Bell Peppers  Chicken, Andouille Sausage, and Sautéed Shrimp
  • Braised Mustard Greens with Bacon Lardons
  • Southern Cornbread with Molasses Butter

Grilling and Rosé

Get your grills fired up and your wine glasses chilled! Chef and Sommelier Bonnie McPike is bringing a gorgeous menu to this class and it’s gonna be fun time! Learn the ins-and-out of great summer grilling, that you’ll use over and over again. In this hands-on class, we will learn the different heats and zones needed to maximize flavor using a variety of grilling techniques. Grilling fish, cheese and lettuce to steaks and dessert to perfection; it’s a three course menu that’s paired with different Rosés, that will become the highlight of your summer entertaining!

Join us and you’ll grill up:

  • Grilled Halibut with Red Onion Escabeche
  • Grilled New York Steak with Parsley, Oregano and Chile Chimichurri Sauce
  • Grilled Romaine Salad with Corn, Lemon and Summer Herb Dressing
  • Grilled Peaches with Honey Mascarpone, Marcona Almonds and Black Pepper

You’ll be greeted with a Glass of Rosé and some Grilled Halloumi with Capers, Garlic, Roasted Tomatoes and Herb Oil.

Jennifer is a culinary arts instructor, private chef and recipe developer, she is a graduate of The Seattle Culinary Academy where she is also a part time instructor. Jennifer has over a decade of restaurant experience working under Jonathan Sundstrom at Lark Seattle. Jennifer spent her early life in the kitchen with her grandmother making homemade pasta, foraging for blackberries and using up every leftover available. Her food is heavily influenced by her Italian family and the seasonal bounty of the Pacific Northwest.
