The Italian Kitchen – Ricotta Gnocchi

If you’re a fan of potato gnocchi, let us introduce you to its cousin – ricotta gnocchi (No potatoes required!) Lighter and slightly chewy, ricotta gnocchi is a snap to make and doesn’t compromise our love for the delicious, pillowy nuggets with which we are familiar. Chef Jen Tarantino Reyes will instruct you how to prepare perfect gnocchi and teach you different rolling techniques (the way her grandmother and mother taught her). Once you pair braised Italian sausage with the light ricotta gnocchi, you’ll be sold!

In this hands-on class, we will make and plate

  • Tuscan Kale Salad with Parmesan and Toasted Breadcrumbs
  • Ricotta Gnocchi with Tomato Butter Sauce served with  Braised Italian Sausage
  • Chef will make Sfingi Italian Fried Doughnuts with a Dark Chocolate Dipping Sauce for your enjoyment!

Kids in the Kitchen – Around the World – 5 Day Camp

This camp is designed for kids ages 8 to 12 years old.

MONDAY, July 24th THROUGH FRIDAY, July 28th
Class runs 10:00 AM to 12:00 PM, Everyday

In this 5-day hands-on cooking series, Chef Drew Flanders will inspire your child to experience foods from around the globe. We will discuss, cook and taste famous foods from around the world, while learning a bit about geography, and exploring the different ingredients and flavor profiles.  Each day, we will create delicious recipes from the “Region of the Day” as our skilled culinary team assists, as you practice knife skills and become more familiar with everyday kitchen equipment. Pack your food passport and experience a different destination every day!

Monday – Middle East
Chicken Kabobs, Hummus with Grilled Flatbread and Veggies

Tuesday – Italy
Handmade Pasta with fresh Tomato Sauce and a Caesar Salad with Homemade Croutons

Wednesday – Vietnam
Pork (or Tofu) Banh Mi, Lettuce Wraps with Shrimp

Thursday – Mexico
Chicken and Black Bean Quesadillas, Grilled Corn Salad

Friday – Argentina
Grilled Steak with Chimichurri, Grilled Veggies and Potatoes

  • All classes are taught by a Culinary Professional, with 2 adult assistants.

Teens at Whisk – Fend For Yourself Dinners – 5 Day Camp

This 5-day camp is designed for teens, ages 13 and up.

Have you ever wanted to make your family a 3-course dinner? Like really make dinner on your own? Join Chef Lee Baker for this 5-day hands on camp where you’ll practice all kinds of kitchen skills while you prepare 5-days of dinners including sides and desserts. Each day will present a new menu with a new protein and techniques galore. You’ll learn made-from-scratch recipes and how to use some grocery store items to streamline the cooking process.

Monday –  Fiesta Night
Skirt Steak Fajitas with grilled peppers and onions, Guacamole, Mexican Rice and Beans, Watermelon Agua Fresca, and Baked Cinnamon Sugar Tortilla Chips

Tuesday – Impressive Past
Handmade Fresh Pasta with Creamy Chicken Alfredo, Antipasto Salad, and Lemon Ricotta Cookies

Wednesday – A Sub Above
Meatball Subs with Tomato Sauce & Provolone Cheese, Fried Zucchini Chips, and Flourless Chocolate Cake

Thursday – Breakfast for Dinner
French Style Omelette with a choice of fillings, Homemade Chicken and Apple Sausage Patties, Hash Browns, Glazed Blueberry Scones

Friday – Fish Bake
Salmon en Papillote with Cherry Tomatoes & Fresh Corn, Smashed Baby Potatoes, and Strawberry Meringue Cake

The Fundamental Foundations Series 201 – Week 3

Week 3 – April 17th:  Doughs

There are few things as comforting as baked goods fresh from the oven. This class will explore the methods and ratios used to create fluffy yeast breads, buttery biscuits, flaky pie crusts, and tender fresh pasta! In this class, we’ll knead, roll and hand-cut pasta. You’ll bake and enjoy a fruit tart. The joy of baking will even follow you home as you’ll leave this class with yeasted bread dough to bake the next day – or freeze to bake later. You’ll also learn tips and tricks for make-ahead frozen dough!

You will create and enjoy a dinner of:

  • Hand-cut Pasta with Red Sauce, Italian Sausage and Pecorino
  • Pan-seared Broccolini
  • Fruit Tarts

This class is part of a 4-Week Series and tickets can be purchased on Week 1, April 3rd.

  • Fresh, Handmade Angel Hair Pasta with Lemon and Chives
  • Spaghetti with Tuna, Capers, Castelvetrano Olives, and Lemon

Making your own pasta is quick and easy and after this hands-on class with Chef Jen Tarantino Reyes, you’ll think nothing of mixing up a batch for a weeknight supper. Add essential recipes for sauces made with fresh herbs and seasonal produce and you’ll have a go-to recipe repertoire. You’ll start with just flour and eggs, creating your own pasta dough that you will turn into one stuffed pasta and one cut pasta to serve along with two unique sauces!

In this hands-on class, you will make:

  • Fresh Handmade Pasta Dough
  • Ravioli with a Lemon Herbed Ricotta Filling in a Light Tomato Sauce
  • Fresh Cut Tagliatelle Pasta with Wild Mushroom Sauce
