The Italian Kitchen – Gnocchi

Making gnocchi is a labor of love, and after making it from scratch, you’ll appreciate those little pillows of potato heaven even more. The perfect gnocchi are the result of carefully selected ingredients, well-crafted dough and the art of rolling them with love one-by-one. In this hands-on class, our Milan born Paola Albanesi careful guidance you’ll gain the confidence to make gnocchi at home.  Paola will share her professional tips and techniques for delicious and unique variations of one of her favorite Italian staples united with PNW seasonal ingredients to help us celebrate fall .

In this class you will make:

Kabocha Squash and Potato Gnocchi with black kale and a Pecornio Romano sauce

Ricotta Gnocchi –  ricotta and spinach dumplings with brown butter sage and parmigiano

We will greet you wit a whipped goat cheese crostini with roasted grapes, thyme and hazelnuts

All the variations are sure to leave your taste buds tantalized and motivated to make the humble gnocchi at home.
