Southwest Twist on a PNW Dinner

Join Chef Cody Castiglia in this hands-on class, where we will pair the exciting and unique flavors of the Southwest with the vast and incredible bounty available here in the Northwest. Southwestern cuisine draws influence from Spain, Mexico, Native Americans, and makes for a delicious fusion of flavors. Chef Cody will teach you how to master the SW flavor infusion that works with all of the wonders of the PNW.

Let Chef Cody guide you through the steps as you create a beautiful meal of:

Dungeness Crab Cakes with Charred Poblano Crema;

Chile De Arbol Braised Chicken Thighs;

Chipotle Marinated Flank Steak and Handmade Corn Tortillas;

 “Borracho Beans” with Queso Fresco;

Roasted Summer Squash in a Pumpkin Seed Mole; and

Theo’s Chocolate Flan with Dulce de Leche and Seasonal Fruit 

All to be enjoyed with delicious wine!

Cody Castiglia is a hands-on and engaging chef-instructor who is passionate about cooking and teaching. He believes in speaking from experience and not merely from a recipe packet. Originally from Western New York, his career has led him to some of the top hotels and restaurants in Dallas, Park City, New York City, and now Seattle. He grew a love of Southwestern cuisine in the kitchen of Chef Stephan Pyles in Dallas, TX. Stephan is known as one of the founders of Southwest cuisine, and helped define the region’s cuisine, using ingredients and techniques that reflect the culture.
