Risotto d’Autunno – Fall Risottos

Cooking Risotto no longer needs to be intimidating, with Milan born Paola Albanesi careful guidance you’ll gain the skills and confidence to produce consistent and unique Risottos at home, perfect every time.  In this hands-on  class, Chef Paola will share her professional tips and techniques for delicious and unique variations of one of her favorite regional Italian dishes united with PNW seasonal ingredients to help us celebrate fall and its warm earthy flavors. In this class, we will make:

Risotto con zucca e salsiccia – Kabocha squash and sausage risotto, with fresh herbs and spices. Sprinkled with Parmigiano Reggiano

Risotto ai funghi – Wild mushrooms risotto, with parsley and Parmigiano.
Insalata di Radicchio, Finocchi e Cachi – A colorful salad that celebrates fall, made with shaved fennel, radicchio, persimmons, hazelnuts and blue cheese, seasoned with Dijon-extra Virgin olive oil vinaigretteRisotti d’A
