Risotto d’Autunno – Fall Risottos
Cooking risotto no longer needs to be intimidating. With Milan-born Paola Albanesi’s careful guidance, you’ll gain the skills and confidence to produce consistent and unique risotto at home, perfect every time. In this hands-on class, Chef Paola will share her professional tips and techniques for delicious and unique variations of one of her favorite regional Italian dishes. She’ll include seasonal ingredients from the PNW to help us celebrate fall and its warm, earthy flavors. In this class, we will make:
Risotto con Zucca e Salsiccia – Kabocha Squash and Sausage Risotto with Fresh Herbs, Spices and Parmigiano Reggiano
Risotto ai Funghi – Wild Mushroom Risotto with Parsley and Parmigiano
Insalata di Radicchio, Finocchi e Cachi – A colorful salad that celebrates fall, made with Shaved Fennel, Radicchio, Persimmons, Hazelnuts and Blue Cheese– seasoned with a Dijon vinaigrette
