In this hands-on class you will learn the basic techniques behind baking Pâte à Choux, a delicious and versatile French dough. Pastry Chef Thanh Tang will teach you how to create the iconic, crispy shells while delving into the science behind baking them to puffed perfection. In addition, you will craft both a smooth and creamy Vanilla Bean Cream and Hazelnut Mousseline Cream to fill your cream puffs and eclairs. In addition you will learn the secret to the perfect Chocolate Glaze!
